We recently celebrated Dr. Suess’s birthday!
If you have littles, March 2nd is often celebrated in schools, as it is the birthday of the man who created so many quirky, creative books that marked our childhood with whimsy and fun…Dr. Suess! So in honor of him, a little green eggs and ham!
You can eat them on a train, you can eat them in the rain! You can make them for St. Pat’s, you can feed them to your cats!
I shared these mini quiche cups here that make such an easy breakfast idea for busy mornings. This recipe is a twist on that, with just 5 ingredients and lots of fun!
Ingredients:
1 cup chopped broccoli, blanched about 2 minutes and drained well, or from a steamer bag (easy shortcut!)
9 eggs
1 cup shredded cheese ( I used cheddar!)
1 cup diced ham, leftover or from the deli
3-4 drops of green food coloring
Directions:
Preheat oven to 375 degrees
Combine all ingredients in a bowl and mix well.
Spray a muffin tin with non stick cooking spray and divide mixture into 12 cups. Bake 15-20 minutes, until eggs have set. Allow 5-10 minutes to cool.
Such an easy, protein packed, GREEN breakfast!
