Welcoming Spring with a fun Easter dessert!
Spring is on the way, and we definitely have the fever over here!
Last week was Spring break for my boys, and my inlaws came to visit! When Gramma is here we always have fun in the kitchen, and making these little carrots in dirt were no exception! I love recipes where my kids can take ownership in the process….they are always so proud of their creations!
One thing I love about these is that it is easy to make just a few or a bunch with a few minor adjustments. I sometimes hate making desserts because my family often only wants a bite or two, and the rest goes to waste….or worse, I eat it all!! We made a few of these for us and took the rest to our friends that just had their fourth baby!!
These are super kid friendly, especially since each one is in it’s own individual cup! The ones I got here also have lids, so they are easy to transport. So delicious, EASY and perfect for Easter!
Ingredients:
1-2 boxes of instant chocolate pudding
For reference, I used 1 box and made a dozen cups
OR
if you are only making a few, you can get the pre-made snack sized pudding cups…EASY!!
1 box or Oreos
Orange candy chocolate melts – Wilton makes a bag of chocolate melts that are already colored orange, but if you can’t find them, you can always get white and add food coloring
12-24 Fresh, whole strawberries (1 for each cup)
I used these 5.5 oz plastic cups with lids, wax paper, 1 ziploc bag and spoons
Directions:
Make pudding according to package instructions or open the lid if using snack paks (lol!)
Melt orange candy melts in the microwave, heating 30 seconds at a time, and stirring in between until melted. Do not overcook.
PRO TIP: My mother in law told me to save a 5 or 6 melts from the bag to throw in, in case of overcooking. It can save your chocolate from being ruined!
Dip whole, washed strawberries into your orange chocolate, leaving the green stem. showing Try to cover all of the red. Set on wax paper to cool and harden. One strawberry per cup.
He concentrated SO hard to get these right!!
Once hardened a little, you can drizzle remaining chocolate over the top to look like stripes on the carrot. ..ours didn’t look great, but we had fun!
Keep in the fridge until you are ready to assemble cups.
Put one sleeve of Oreos in a ziploc bag and crush….my five year old likes to use his wooden hammer, but go crazy with your tool of choice.
In your plastic cups, layer pudding, Oreos and then “carrot”
Serve immediately or refridgerate until ready to serve!
SO easy, festive and fun!! Your family will LOVE them and they would make a great Easter dessert!
