Five Mini Pies You Can Make in Minutes

Could this quote BE more true?!? (spoken in your best Chandler voice!)

“People who love to eat are always the best people,” a quote from the amazing Julia Child.  This is also the woman who said, “With enough butter, anything is good.”  My fitness goals aside, she is my people!

And my MAIN people (my hubby and my two little men) are the type whose day revolves around what we will be eating next!  My boys are also very excited and willing to “help” in the kitchen, which I absolutely want to encourage!  So awhile back Logan helped me make these mini s’mores pies.

These were great because we could make them start to finish in about 5 minutes (about his attention span!) and he could help with every step of the process.  You can find our easy method here.

So over Christmas I tried to think of other ways we would could make these mini pies….and without baking!  I also liked that with the s’mores pies we could just make one or two for a dessert or snack, instead of being stuck with an entire full sized pie or cake.

So we came up with this easy method of mini graham cracker crusts, flavored greek yogurt, a shot of Redi-whip and a yummy garnish (fresh fruit in most cases!)  At Christmas we had a mini of the five pies below.  My five year old son and six year old niece walked around with the “menu”, took orders and the three of us made everyone’s pies in about 10 minutes total.  Everyone got a sweet treat and we weren’t left with tons of leftover dessert no one wanted to take home!

The Method:

The first component is these mini graham cracker crusts.  They come 6 to a package at your grocery store.

Then we chose some flavors of greek yogurt and the appropriate garnish.  In most cases the individual yogurt size was enough to make 2 mini pies.

You could remix these a million ways, but at Christmas we offered:

Banana Cream Pie

Slices of banana, topped with banana cream greek yogurt, whip cream, Nilla wafers and more bananas

Key Lime Pie

Key Lime greek yogurt, topped with whip cream, rasberries, blueberries and kiwi

Pumpkin Praline Pie

Pumpkin greek yogurt, topped with whip cream and candied praline pecans

Lemon Berry Pie

Lemon yogurt, topped with whip cream, blueberries and lemon…would be great with strawberries too!

These pies were a hit, and could be made a million different ways, depending on your family’s tastes!  They are simple, fun to make and watching the kids take ownership in them was priceless!
