Slow Cooker BBQ Chicken 5 Ways

This slow cooker BBQ chicken is a family favorite! 

It’s easy, versatile and perfect for a busy weeknight! I’m sharing this base chicken recipe, as well as five ways to make it a meal! 

BBQ Chicken Ingredients:

1.5-2 lbs of boneless chicken breasts

1 cup of BBQ sauce

1/2 cup Italian dressing

1/4 cup brown sugar

1 tablespoon Worcester sauce

BBQ Chicken Directions:

Place chicken at the bottom of your slow cooker.  If you don’t already have a slow cooker you love, we have THIS ONE and it is AWESOME! 

Mix all other ingredients in a small bowl and stir well.

Pour mixture over chicken.  Cover and cook on high for 3-4 hours or low for 6-8.

Shred the chicken in the crockpot using THIS 

Many of you may already have one of these mix n chops , so if you’ve never tried it for this purpose, it is awesome!  You can also use a hand mixer.  Shredding it in the slow cooker helps coat all the chicken with the sauce and leaves less mess.

Ingredients

  • 1-2 lbs Boneless Chicken Breast
  • 1 cup Your Favorite BBQ sauce
  • 1/2 cup Italian dressing
  • 1/4 cup Brown sugar
  • 1 tbsp Worcester sauce

Instructions

  • Pkace the chicken in your slow cooker.
  • Mix all other ingredients together in a small bowl and stir well.
  • Pour mixture over chicken. Cover and cook on high for 3-4 hours.
  • Shred chicken and place in crockpot until ready to serve so that chicken is covered in sauce.

The beauty of this slow cooker BBQ chicken is that it can be used for a number of meals!  I’m sharing 5 ideas today.  Sometimes I will make a double batch of the chicken and make two of these throughout the week….working smarter, not harder! 

BBQ Chicken Sliders 

We put our slow cooker BBQ chicken on Hawaiin rolls and topped with an easy cole slaw.  Others we topped with a pickle and mustard. 

We roasted brussel sprouts and sweet potatoes tossed with salt, pepper, olive oil and bacon for about 20 minutes at 400 degrees and cooked some baked beans. Easy sides to make this a full meal!

BBQ Chicken Bowl

The beauty of a bowl is everyone can make it their own. 

I start with a rice base, usually jasmine rice prepared via the package directions, and then season it with cilantro and lime.

I set all the ingredients out for my family to make their own bowls. 

Ingredient ideas include:  the slow cooker BBQ chicken (of course), roasted corn, black beans, cherry tomatoes (halved), cheese, lime, red onion (diced), cilantro, avocado, shredded lettuce…the list goes on!  Choose things your family will like.   

BBQ Chicken Pizza

Another easy option!  Start with your favorite pizza dough.  Spread a thin layer of your favorite BBQ sauce.  Then top with the BBQ chicken, very thinly sliced red onions-the thinner the better so they carmelize in the oven, and cheese.  Bake at 350 for 10-15 minutes, or until crust is the desired crispiness and the cheese is melted.

Add a salad or veggie as a side and dinner is served! 

Sheet Pan Nachos

This is an easy family favorite!  Line a sheet pan with foil for easy cleanup.  Start with a layer of your favorite tortilla chips.

Top with your BBQ chicken, cheese, roasted corn, and black beans.  Heat oven to 350 degrees and cook for 10-15 minutes, or until cheese is melted.  When you remove nachos from the oven, you can add tomatoes and cilantro.  We often add a side of guac and a salad to make this a meal!

BBQ Chicken Baked Potato

This BBQ chicken is also great on top of a baked potato with a little ranch or sour cream and green onions.

We added a salad and fruit to make it a meal!
