Time for some cowboy quesadillas from this Texas girl….yeehaw!
Contrary to some people’s idea of Texas, we don’t all wear big cowboy hats and ride horses. In fact, if you have ever seen me on a horse, you know it’s something that does not come naturally to me! Last time I rode one I ended up with bruises all down my legs from sitting incorrectly. Not fun!!
BUT, I do love some Tex Mex and today’s quesadillas are just that! A combo of slow cooker BBQ chicken, Cowboy cavier, cheese and tortillas!
Slow Cooker BBQ Chicken Ingredients:
1.5-2 lbs of boneless chicken breasts
1 cup of BBQ sauce
1/2 cup Italian dressing
1/4 cup brown sugar
1 tablespoon Worcester sauce
Salt and pepper to taste
Slow cooker liner for easy cleanup, here
BBQ Chicken Directions:
Line slow cooker. Season chicken with salt and pepper and place at the bottom of your crockpot.
Mix all other ingredients in a small bowl and stir well.
Pour mixture over chicken. Cover and cook on high for 3-4 hours.
Shred chicken and place back in crockpot until ready to serve so that chicken in covered in sauce.
This chicken is great on a bun or over a salad! Easy and flavorful!
Slow Cooker BBQ Chicken
Ingredients
- 1-2 lbs Boneless Chicken Breast
- 1 cup Your Favorite BBQ sauce
- 1/2 cup Italian dressing
- 1/4 cup Brown sugar
- 1 tbsp Worcester sauce
- Salt and pepper to taste
Instructions
- Season chicken with salt and pepper and place in your slow cooker.
- Mix all other ingredients together in a small bowl and stir well.
- Pour mixture over chicken. Cover and cook on high for 3-4 hours.
- Shred chicken and place in crockpot until ready to serve so that chicken is covered in sauce.
Cowboy Cavier
This can be made a number of different ways, but basically just mix:
1 can black beans, rinsed
1 can of corn, rinsed
1 can of rotel
The juice of 1 lime
You can also add extra ingredients like chopped cilantro, red onion, jalapenos, peppers, etc.
Cowboy Quesadillas Ingredients:
Slow Cooker BBQ chicken
Cowboy cavier
Cheddar cheese (or cheese of your choice)
Tortillas
Cowboy Quesadillas Directions:
Set your stove to medium-high heat. Add oil or spray your pan with non stick spray. Place your tortilla in the pan and cover the entire tortilla with cheddar cheese.
Let it melt a bit and then spoon BBQ chicken and cavier on one half of the tortilla.
Cook 2-4 minutes or until cheese is melted and totilla edges are getting golden brown.
Fold over tortilla and remove from pan. Cut into wedges and serve.
Toppings:
We like to dip our quesadillas in pico de gallo or guacamole.
