This slow cooker chipotle chicken is so easy to make and full of flavor!
We added it to a baked sweet potato and topped it with some chipotle yogurt sauce for a quick and easy weeknight meal! You could also add sautéed spinach to this for a little punch of greens!
This recipe has three components: chipotle chicken, a baked sweet potato, and chipotle sauce. All quick, easy and delicious!
Chipolte Chicken
The chipotle adds a hint of heat and spice. If you are wimpy when it come to heat, only use part of the can!
Ingredients:
1-1.5 lbs of boneless chicken breast
1 12 oz can of chipotle chilis in adobe (do not drain)- Set 1-2 chipotle peppers aside for the sauce
Water of chicken stock
Slow cooker liner for easy cleanup
Directions for Slow Cooker:
Line crockpot. Put chicken breast at the bottom and pour chilis and water or stock on top until completely covered. Cover and cook on high for 4 hours or low for 6-8 hours. Shred with a fork to serve.
Directions for Instant Pot:
Turn pot on and let it heat up. Put chicken at the bottom of the pot and pour chilis and water or stock on top until covered. Secure lid and hit poultry setting. Allow chicken to cook until timer goes off. Perform quick release to release pressure. Open the lid, remove chicken and shred with a fork to serve.
4 Methods for baking your sweet potatoes:
I LOVE sweet potatoes and bonus that they are packed with all kinds of vitamins and healthy goodness!! Here are 4 different ways to “bake” yours!
Slow Cooker:
Wash potatoes well and do not dry.
Place directly in the slow cooker (water from rinsing is all the liquid you will need!)
Cover and cook on low for 6-7 hours
Instant Pot
Wash sweet potatoes well.
Add 1 1/2 cups of water and lay your steaming trivet inside.
Place potatoes on the trivet and place lid on Instant Pot.
Seal and use the manual mode to cook potatoes for 18 minutes.
Use the natural release (about 15 mintues) and carefully remove the lid.
Oven
Preheat oven to 400 degrees
Wash sweet potatoes well and poke holes in them with a knife
Place on a foil lined baking sheet and bake 40-60 minutes (depending on size of the tater!)
Microwave
Wash sweet potato well and poke holes in them with a knife (do not skip this step, your potato can explode!)
Loosely wrap your potato in a damp paper towel and place it on a microwave safe plate
Microwave for about 7 minutes (depending on size of the potato) flipping halfway through
Chipolte Sauce
Once your chicken is cooked and your sweet potato baked, this little sauce adds a yummy flavor to top it all off!
Ingredients:
Plain greek yogurt
1-2 chipoltes that were not used in your chicken (a little goes a long way!)
Directions:
Cut chipotle(s) into small pieces and mix with the yogurt to taste.
