Slow Cooker Chicken Enchilada Soup

This recipe is a dump and dash….sounds appetizing, right?!?

What I mean is, you literally just dump some easy ingredients, many of which you probably already have in your pantry,  in a slow cooker, and dash out the door!  Return home at the end of the day, and your meal is done!

Some days are just busy and this type of recipe is just what you need!  Not to mention, this soup tastes great, and turns out every single time!

Ingredients:

1-1.5 lbs. of chicken breasts

3 cups of chicken broth

1 can red enchilada sauce

1 can diced tomatoes

1 can black bean, drained and rinsed

1 can corn, drained and rinsed

1 can diced green chilis

1 teaspoon minced garlic

Optional toppings:

Avocado

Cheese

Cilantro

Tortilla Strips or chips

Directions:

Put all ingredients in your slow cooker and cook on low 6-8 hours or high 3-4 hours.  Shred chicken with a fork before serving.  Top with avocado, cheese, cilantro, tortilla chips, or whatever your family enjoys!

Too easy, right?
