Easy Instant Pot Mac and Cheese

February 24, 2018

Mac and cheese…is there anything better?

Cheesy, gooey goodness that just makes you feel good!

My boys love it, and I often add chicken and broccoli to it to make it a complete meal, rather than just a side!

This method in the Instant Pot is my new favorite!  SO easy and absolutely delicious!

Ingredients:

3 cups of pasta – whatever pasta your family likes!

4 cups of water

Dash of salt

3 tablespoons of butter

1 cup of evaporated milk

3 cups of cheese – I used cheddar and mozzarella, but any kind you like is great!

green onions/extra cheese/bacon bits for toppings- optional!

Directions:

Add pasta, water and salt to your Instant Pot.  Set Instant Pot to manual, high pressure, for 3 minutes.

Lock lid and close pressure valve.  Once done, do a quick pressure release and turn Instant Pot off.  Open the lid and carefully drain water from pasta….use mitts…the bowl will still be hot!

Turn back on and hit the saute setting.  Add in butter and milk.  Stir.  Add in cheese a cup at a time, stirring continuously as it melts.

Once you have the consistency you want, turn IP off and serve!

This recipe tastes best when served immediately after cooking!  It makes a great side, or add chicken or ham and broccoli to make it a complete meal!
