Easy Spinach Strawberry Salad

March 29, 2018

This spinach strawberry salad just screams spring and summer!

It is fresh, colorful, light, and the perfect pairing for so many dishes!

I used to make a similar salad with a somewhat labor-intensive homemade dressing, until my mother-in-law introduced me to this….

THE best strawberry dressing!  I will never make it myself again!! Add it to this salad….easy and delicious!!  You can find this at any major grocery store, Target or Walmart!

If you want to make this a meal rather than a side top it with grilled chicken, salmon or add bacon and avocado for some protein and healthy fat!

Try it and I promise you’ll be making this for months to come!

Ingredients:

6-8 cups of spinach, washed and dried, stems removed

1 cup toasted almonds

2 cups sliced strawberries

1/2 of a red onion, sliced

THIS strawberry dressing to taste

NOTE:  Do NOT put the dressing on until you are ready to eat.  Otherwise your salad will be soggy, wilted and sad!  A little of this dressing goes a long way, so err on the side of caution when adding it in.

Directions:

Combine all items in a bowl and toss.

When you are ready to eat, add salad dressing.  See note above.

We made this strawberry spinach salad as part of our Bunny Brunch!

Find it here.
