Sheet Pan Lemon Chicken and Asparagus

I LOVE sheet pan meals!  SO easy and when you line your pan, the cleanup seriously takes five minutes!

This one is probably my new favorite and bonus points that it’s also such a fast, healthy option!  Perfect for a busy weeknight!

Fresh and light flavors that are perfect for summer!

Ingredients:

3 lemons

1-1.5 lbs chicken tenders – these thinner cuts will cook faster

2-3 tablespoons of lemon pepper

1 bunch of asparagus

Olive oil and salt to taste

Foil or parchment paper for your sheet pan (optional, but makes cleanup SO easy!)

Directions:

Preheat oven to 425 degrees.  Cover your sheet pan with aluminum foil or parchment paper.

Juice 1 lemon and sprinkle the chicken tenders with fresh lemon juice and the lemon pepper.  Set aside.

Slice the 2 remaining lemons into rounds and place them on your sheet pan.

Place asparagus and chicken over the slices of lemon.

Drizzle everything with olive oil and sprinkle with salt to taste.

Bake 15-20 minutes or until chicken is fully cooked.

This meal is quickly becoming a summer staple at our house!  Hope your family loves it too!
