This slow cooker korean beef broccoli bowl was SO good!!
There is something SO awesome about putting all your ingredients in a slow cooker, heading off for the day and returning home to an almost finished meal!
This little recipe is so full of flavor, and this method is so easy, it almost feels like cheating! It is a perfect weeknight meal that your whole family will love!
Ingredients:
1-1.5 lbs of flank steak
1/2 cups of cornstarch
1 teaspoon of minced garlic
1/2 cup of soy sauce
1 cup of beef broth or water
3/4 cups brown sugar
1/2 an onion, chopped
Seseme seeds and green onions for garnish
Brown rice- I buy these that you microwave , so they are ready in minutes
Or for a healthier option, we sometimes use riced cauliflower.
Broccoli (trees at our house!) – I buy this broccoli that steams in the bag in the microwave- just so easy. My boys like to pretend they are giants eating tiny trees, and if it gets them to eat veggies…they can be giants all day long!
Slow cooker liner for easy cleanup- game changer!
Directions:
Cut flank steak into bite sized pieces and put in a Ziploc bag with cornstarch. Shake until beef is coated with the cornstarch.
Add garlic, soy sauce, broth, brown sugar, and onions to the slow cooker and stir. Add in coated beef and stir again.
Cook on high for 2-3 hours or low for 4-6 hours until cooked.
Microwave rice and broccoli.
Place rice and broccoli in a bowl and spoon beef on top. Garnish with sesame seeds and green onions if you’d like and enjoy!
