Pot pie might be the ultimate comfort food! Warm and creamy with a flaky crust, filled with chicken and veggie goodness!
This recipe is SO easy and much of the work is already done for you! You’ll be able to whip this together in minutes, but the results are so delicious, your family will think you made way more effort than you actual did! Score!
The perfect weeknight meal!
Ingredients:
1-1.2 lbs of boneless chicken breasts. On a super busy night, you can also just grab a rotisserie chicken and remove the chicken from the bones
1 teaspoon minced garlic
1/2 teaspoon extra virgin olive oil
1 medium onion chopped
1/2 cup milk
10 oz. frozen vegetable medley
1 10.5 oz can of cream of chicken soup (I used low fat)
Frozen pie crusts with 2 crusts
Salt and pepper to taste
Directions:
Preheat oven to 450 degrees. Heat 1/2 teaspoon of olive oil in a large skillet.
Cut chicken breasts into bite-sized pieces. Add chicken breast, garlic, and onion to skillet and cook until chicken is done.
Mix in vegetable medley, cream of chicken soup, and milk and stir.
Spray a pie pan or casserole dish with cooking spray and lay one pie crust along the bottom and up the sides.
Pour the entire mixture in the skillet into your pie crust. Add salt and pepper.
Place the second pie crust on top. Cut an X or slit in the middle and place in oven.
Bake 15-20 minutes, until crust in golden brown.
Allow to cool about 10 minutes, serve and enjoy!
