At first glance this may seem like a strange combination…
Bacon, corn, pasta….huh? BUT, I assure you, give it a try and you will LOVE it!
I mean, can you really go wrong with bacon?!? The smoky flavor, the creamy corn and the pasta make for a unique mix that is easy to whip together on a weeknight!

7-9 pieces of bacon – this is our favorite
2 cups of pasta – any kind you like – I used shells this time!
1 teaspoon of EVOO
1 small red onion, chopped, here
1 teaspoon minced garlic, here
1 cup or fresh or frozen corn, here
1 can of creamed corn, here
1/2 cup of parmesan cheese, here
Salt and pepper to taste
green onions-optional, here
Directions:
I like to cook my bacon in the oven-easier, less mess!! Preheat oven to 400 degrees.
Line a baking sheet with aluminum foil. Set a cooling rack on top and line your bacon up. Cook 15-20 minutes or until bacon is desired crispness. Once finished, pat excess grease with a paper towl and cut into bite-sized pieces!
While your bacon is cooking, bring water to a boil in a large pot and cook to al dente (6-7 minutes).
Add a teaspoon of EVOO to a pan and bring to medium-high heat. Saute onions (4-5) minutes. Add in garlic and frozen or fresh corn and cook for another 4-5 minutes. Stir in cream corn and bacon.
Drain pasta and combine it with the corn and bacon mixture! Top with parmesan cheese, green onions, and salt and pepper to taste!
SO easy and completely delicious!
