I love this chili lime seasoning from Trader Joe’s!
It is great on chicken or fish! Today I’m sharing how to use it on chicken for the Instant Pot or slow cooker. This chicken can then be used for tacos, nachos, quesadillas, on top of a salad….so many possibilities!
We used it for burrito bowls and it did not disappoint!
Ingredients for Chili Lime Chicken
1-2 lbs of chicken breast
Trader Joe’s chili lime seasoning
Water or chicken broth
Instant Pot method:
Season chicken generously on both sides with the chili lime seasoning. Place trivet in the Instant Pot, along with 1/2 a cup of water. Close the lid and hit the poultry setting (15 minutes). The Instant Pot will heat up and then count down from fifteen. Once finished, pressure release and open the lid to your finished chicken.
Slow Cooker Method:
Season your chicken generously on both sides. Line slow cooker for easy cleanup and place seasoned chicken inside. Pour in water or broth until chicken is covered. Cover with lid and cook on high for 3-4 hours or low for 6-8 hours. When finished, you should be able to shred the chicken with two forks.
Burrito Bowl Ingredients:
Chili lime chicken
Brown rice or quinoa as the base- I grabbed these easy, microwaveable ones from Trader Joe’s and added lime and cilantro to season them!
The beauty of this is that you can top these bowls with whatever your family enjoys! We used:
Corn
Cheese
Salsa
You could also add:
Avocado
Black beans
Onions
Peppers
Pico
Guacamole
Burrito Bowl Directions:
Cook your chicken according to the instructions above. Cook rice or quinoa according to package instructions and season with lime juice and cilantro. Place shredded chicken and all other toppings on top.
