Today I’m sharing three peach recipes you need to try this summer!!
Summer is here…and that means it’s peach season!

Fresh yellow peaches are a summer staple at our house! My boys are happy to eat them as a snack on thier own, but we also love getting creative with how to use them in recipes.
I headed to Kroger for their Prima® yellow peaches with the intent of making an entire meal using these peaches as the star! Spicy chipotle peach chicken with peach salsa, salad with sliced grilled peaches and grilled peaches topped with homemade vanilla ice cream and cinnamon brown sugar for dessert! Yes please!! Adam grilled while the boys played, and we were ready to sit down and eat right before the sun went down…the best time to enjoy being outside without suffering in the Texas heat! It was such a perfect summer night!
I’m excited to share these three peach recipes with you today in hopes that they will make it to your table this summer!
Spicy Chipolte Peach Chicken
This glaze was the perfect combination of spicy and sweet! If your family sways more toward sweet, use more peaches! If you like the spice, turn up the heat with more chipolte.
Ingredients:
4 skinless chicken breasts
1/2 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon salt
1 Prima® yellow peach, peeled
2 chipoltes in adobe sauce
Juice from 1/2 a lemon
Directions:
Preheat your outdoor grill to medium/high heat.
Combine the cinnamon, cloves and salt in a bowl and season both sides of your chicken.
In a food processor puree the peach, chipolte and lemon juice to create your glaze.
Grill the chicken for 6-8 minutes per side, brushing the glaze on every few minutes until the internal temperature is 165.
Top with peach salsa (recipe below)
Peach Salsa Ingredients:
1 1/2 cups of diced Prima® yellow peaches
1/4 cup red onion, diced
2 teaspoons of chopped jalepeno with the seeds removed- You can adjust based on the level of heat you prefer!
1/3 cup cilantro, chopped
1/4 cup lime juice
salt to taste
Directions:
Mix all your washed and chopped ingredients in a bowl. Serve immediately or keep in the fridge until time to serve.
This salsa is also great on salmon or as a topping for fish or shrimp tacos.
Grilled Peach Salad with Pecans, Goat Cheese and Blueberries
This salad just screams summer! Fresh and delicious!
Ingredients:
2-3 Prima® yellow peaches
Sprinkle of cinnamon
2 teaspoons of butter
2-3 cups of spring mix or greens of your choice
1/2 cup pecan halves or pieces
1/2 cup goat cheese
1/2 cup of blueberries
Dressing of your choice – we used a honey vinaigrette
NOTE: To make this an entree rather than a side, add chicken breast or shrimp
Directions:
Half the peaches, remove the pits and sprinkle each half with cinnamon. Place a small pat of butter in the middle of each half.
Heat grill to medium-high heat and cook until peaches are cooked to desired taste. We like them to be soft with some grill marks-1-2 minutes per side.
Remove peaches from grill and set aside.
Place spring mix, pecans, blueberries and goat cheese in a bowl and toss with salad dressing of your choice.
Slice peach halves into smaller slices and place on top.
Grilled Peaches with Ice Cream and Cinnamon Butter
Don’t forget dessert!! We used some of our grilled peaches for our salad, but saved 4 halves for dessert!
Ingredients for Grilled Peaches:
2-3 Prima® yellow peaches
Sprinkle of cinnamon
2 teaspoons of butter
Ice Cream for topping-optional-but is it really?
Ingredients for Sauce:
3 teaspoons of butter, melted
2 teaspoons of cinnamon
2 teaspoons of brown sugar
Directions:
Half the peaches, remove the pits and sprinkle each half with cinnamon. Place a small pat of butter in the middle of each half.
Heat grill to medium-high heat and cook until peaches are cooked to desired taste. We like them to be soft with some grill marks-1-2 minutes per side.
Remove peaches from grill and set aside.
Melt butter and stir in cinnamon and brown sugar.
Scoop ice cream onto each peach half and top with the cinnamon sugar sauce.
And dinner is served!!
