Our favorite weeknight sides are roasted veggies! They are fast, easy and there are all sorts of ways to mix them up!
I always line my baking sheet for easy cleanup! Since cook time is the same for all (about 15-20 minutes), you can do several different veggies at a time for variety, and they can roast while you prepare the main dish!
Chopping all these veggies at the beginning of the week is a big time saver on busy weeknights, or if I know it’s going to be a hectic week, I sometimes buy the pre-cut options in bags in the produce section. Lazy? Maybe. But sometimes it is worth the time it saves!
Anytime I can get my kids to eat veggies, I consider it a win, so sharing a few of our favorites today if you are needing a quick side for a meal this week:
Sweet Potatoes:
My kids love roasted sweeet potatoes! They eat them savory or sweet!
Savory method:
Cut sweet potatoes into bite-size pieces. Toss with olive oil, salt and pepper or a seasoning salt.
I also sometimes chop a strip or two of bacon and add it to the pan.
Bake at 400 degrees for 15-20 minutes. My kids love this method with ketchup!
Sweet method:
Same as above except I toss it with olive oil and a little bit of sugar and cinnamon. We have also just done the olive oil and then drizzled them with honey after they roast.
Broccoli and Cauliflower
My kids actually love to eat “mini trees.” I toss them with olive oil, salt and pepper and sometimes garlic.
Bake 400 degrees for 15-20 minutes.
Brussel Sprouts
It took me awhile to convince even my hubby that Brussel sprouts could be delicious! They are actually my very favorite.
Toss with olive oil, salt and pepper. I almost always add a teaspoon of minced garlic and a strip or two of bacon chopped into bite sized pieces.
Bake at 400 degrees for 15-20 minutes.
