Slow Cooker BBQ Chicken and Sweet Potatoes

Today I’m sharing an easy, healthy slow cooker meal that’s perfect for a busy weeknight! 

Ingredients:

I added these ingredients to my Walmart grocery order!  I order my groceries from Walmart each week, and often order their brands.  They are less expensive, but the quality is great!  This honey BBQ sauce we used for this recipe is one of our favorites! 

Sweet Potatoes

EVOO and salt

Foil

Chicken breast

2 bottles of BBQ sauce

Worcestershire sauce

Italian Dressing

Red Onion and Cilantro (optional)

Directions:

Wash your sweet potatoes. Drizzle with a little EVOO and salt and wrap with foil.

Mix 4 cups of BBQ sauce, 2 cups of Italian dressing and 1/2 a cup of worcestershire sauce.

Place potatoes and chicken breast in your slow cooker.

Pour BBQ mixture over the chicken

. Cook 3-4 hours on high, 6-8 hours on low.

Remove potatoes and shred chicken.

Unwrap and cut potatoes down the center. Add chicken and top with additional BBQ sauce, cilantro and chopped red onion.

 

 

We grabbed a Walmart salad kit and strawberries to complete the meal! 

Cooking the potatoes and chicken in the slow cooker all together made clean up super easy, and everyone ate it up!  Weeknight dinner win!
