Last week I made ham in the Instant Pot…
So naturally, I needed a recipe to re-mix our leftover ham! With the cold and rainy weather this week, this chowder was just perfect!
Hearty, full of flavor and the slow cooker did all the work! If you make ham for the holidays, you definitely need to add this to your post-holiday rotation!
Ingredients:
This was plenty for my family of four (two adults, two littles) but if you are serving a crowd, double it!
1-2 medium potatoes, peeled and cut into cubes
2 cups fresh or frozen corn
2 cups of cubed ham (leftover or from the deli)
1 small onion, chopped
1 teaspoon minced garlic
1 1/2 cups of chicken broth
1 teaspoon cornstarch
1 cup whole milk
1 cup of shredded cheddar cheese
1 cup of sour cream
Green onions to garnish (optional)
Slow cooker liner for easy cleanup
Directions:
Put the potatoes, corn, ham, onion, garlic and chicken broth in the slow cooker and cook of high 4-6 hours or low 8-10 hours.
Once that time is up, mix the cornstarch and milk in a small bowl and stir. Add it to your slow cooker, stir and cook on high, covered, for an additional 20-30 minutes or until thickened. You may want to stir it occasionally.
Add in cheese and sour cream. Stir well. Serve hot and garnish with green onions!
