Make yourself a dang quesadilla!  We introduced the boys to Napoleon Dynamite on Saturday, and that line cracked them up.  They finally got why their mom had been saying it for years….heck yes!

So Sunday, we decided to make these chicken bacon ranch quesadillas!  They are perfect for a weeknight meal or as a snack on gameday! 

Ingredients:

I added these ingredients to our weekly Walmart grocery order.

For this recipe, add these items to your grocery order: 

3 cups of shredded cooked chicken, rotisserie works great!

2 cups of Monterey  jack cheese

8 oz of cream cheese

1 packet of Ranch seasoning

8 10 inch flour tortillas

Real bacon bits

Green onion, chopped

Melted butter

Ranch dressing for dipping (optional)

We often grab Great Value products-Walmart’s in house brand.  It saves us money and the quality is great! 

Directions:

Preheat oven to 425.

Mix chicken, cream cheese, ranch seasoning and cheese in a bowl. 

Arrange 7 tortillas to cover a baking sheet, with half the tortilla hanging off.

Spread your chicken mixture and top with bacon and onions.

Fold tortillas and add one more to the center so that all the chicken mixture is completely covered.

Brush with melted butter and bake 15-20 minutes until melty and golden brown.

This method of baking quesadillas is from The Pioneer Woman, and it’s genius!  You can easily switch up the ingredients inside to match your family’s favorites.  

We added a marketside salad and some fresh strawberries to make it a full meal!
