This simple idea for flavoring your chicken breast is perfect in a salad or on a sandwich! Below I’ll share how to make the chicken breast, as well as how to incorporate it into a delicious salad with the BEST rosemary vinaigrette and a sandwich you’ll want to make again and again!
Rosemary Chicken Breast
Ingredients:
1/2 lb to 1 lb boneless skinless chicken breasts- 1 breast per salad or sandwich you want to make
4 tablespoons minced fresh rosemary
Olive Oil
Salt and Pepper
Directions:
Heat olive oil in a large skillet over medium-high heat.
Season chicken with fresh rosemary, salt and pepper.
Cook chicken in the pan until golden on both sides, roughly 5-6 minutes per side.
Remove from the heat and let sit a minute or two before slicing for the salad or sandwich.
Rosemary Chicken Salad
Ingredients:
Spring greens, spinach or butter lettuce
Rosemary chicken breast from recipe above, sliced
2-4 slices of thick-cut bacon, cooked
Cherry tomatoes, halved
1 large avocado, cut into slices
Ingredients for Rosemary Vinaigrette:
2 teaspoons dijon mustard
1/2 cup olive oil
1/2 cup red wine vinegar
1 teaspoon minced fresh rosemary
Salt and pepper
Directions:
Directions for Rosemary Vinaigrette:
Whisk the mustard, oil and vinegar. Then add rosemary salt and pepper and whisk again.
So easy, so flavorful, so good for you!
Directions for Salad:
Place greens in a bowl and arrange chicken, bacon, cherry tomatoes, and avocado on top. Toss with rosemary vinaigrette
Rosemary Chicken Sandwich
This is basically the salad above in sandwich form!
Ingredients:
2 slices of the bread of your choice
Rosemary chicken breast from recipe above, sliced
2-4 slices of thick-cut bacon, cooked
Cherry tomatoes, halved
1 large avocado, cut into slices
Directions:
Put all ingredients between your two slices of bread. Add condiments of your choice.
