These avocado deviled eggs are SO delicious for the holidays!
We love deviled eggs, and the avocado in these is not only a fun flavor twist, but the green makes them a little more festive for the season!
Ingredients:
1 dozen large eggs
2 small ripe avocados, peeled and pitted
1 cup of mayo
1 cup real bacon bits
1 red bell pepper
Salt, pepper and paprika to taste
Directions:
Boil water and cook your eggs OR use this:
This little appliance is worth every penny in my opinion, especially if you make hard boiled eggs often. You add a little bit of water to the bottom, put eggs on the tray, cover with the provided lid and hit the button. A timer goes off when they are done, and the eggs come out perfect every time! It comes in several color options.
Find it HERE.
Let your eggs cool. Peel off the shell. Cut them longways and scoop out the yellow yolk, placing them in a bowl.
Set your egg whites on a tray, as they will serve as our containers for our yolk mixture.
I LOVE this tray:
It is under $10 and perfect for deviled eggs.
Find it HERE.
Add avocado, mayo, bacon, salt and pepper to your bowl of yellow egg yolks. Mash and combine all ingredients well.
Scoop mixture into each egg white. I have tried to put this mixture into a piping bag with a pretty tip to make my eggs fancy, but for whatever reason (probably user error!!) it never looks quite right, and I end up making a big mess! If you feel inclined, go for it…but a scoop tastes just the same! Haha!
Cut your red bell pepper into little squares and place three on each egg to make it look like holly berries.
Sprinkle with paprika to taste.
These make a fun appetizer or would be great for Christmas morning!
I hope these avocado deviled eggs make their way to your menu this season!
