I LOVE a fresh start and new beginnings! As I evaluated ways that this blog could better serve you in this new year (happy 2018!!), I decided to try sharing recipes in a weekly recipe roundup, rather than sporadically, as I have in the past! This way you know 5-7 new recipes will be hitting your inbox early every Saturday morning, and they can provide you with ideas as you meal plan for the week. Based on feedback from those of you on Instagram, most people said they did their grocery shopping and meal planning on the weekend, (Sunday was the most popular day!) so I thought Saturday morning would be the best time to send this out! I will adjust that as needed!
I also asked for feedback as to what types of recipes are most helpful and the overwhelming response was slow cooker and easy, weeknight meals for this time of year, so these posts will be heavy in those two categories, with some other fun ideas in the mix! I LOVE hearing what is most helpful to you, so always feel free to let me know, and if you make any of these recipes and have feedback, I wanna hear it!
Cooking does not come naturally for me, but since becoming a stay at home mama, I have learned to really enjoy it, and have become more confident in my skills…unlike the girl that started more than one fire in my parents kitchen growing up!! Sorry Mom and Dad! I am excited to share our family’s favorites! Anything I share will be EASY and usually pretty quick, as I know you all are busy and your time is PRECIOUS! So let’s get to it!
4 slow cooker meals (with Instant Pot options as well!), a fun dessert/snack idea and a cocktail! Click on the pic to take you to the full post with lists of ingredients, more pics and easy directions!
Caprese Grilled Cheese and Slow Cooker Tomato Basil Soup
Is there any better comfort food than grilled cheese and a steaming cup of soup? This is a twist on the traditional grilled cheese and a yummy slow cooker soup that will warm you up as the temps drop! Find both here.
Slow Cooker or Instant Pot Chipolte Chicken Tacos
I never met a taco I didn’t like, and these are one of my favorites! Great for Taco Tuesday….or anytime! Find the recipe here!
Slow Cooker Chipolte Chicken Sweet Potatoes with Chipolte Sauce
My family turns their nose up at leftovers, but I HATE throwing food out! I’ve learned, if I take a component of last night’s meal and make it into something totally different, they will eat it. Saves food, time and money….WIN!
So I used our leftover chipotle chicken from the tacos and made these sweet potatoes, topped with chipotle chicken and a yummy chipotle sauce! I also give 4 ways to “bake” the perfect sweet potato! Find it here.
Slow Cooker Korean Beef Broccoli Bowl
This is so full of flavor and so easy for a quick, weeknight meal!
Find the recipe here.
5 Mini Pies you can make in minutes
We made our mini s’mores pies awhile back and it started this obsession…
My kids help make these pies and 4 of the 5 don’t even require baking! They take 5 minutes start to finish and make the best after school snack or quick dessert!
Just an easy idea with a million combination options! See our favorites here.
Cranberry Moscow Mule
And if mama needs a little treat too….these cranberry Moscow Mules are so yummy and a favorite for this time of year!
Find the recipe here.
Thank you for joining me in this first roundup! I look forward to sharing so much more in the weeks to come!!
