I am going to make an effort to share more Instant Pot recipes, because for starters, I LOVE mine! If you do not have one, jump on board (here)!! I’ll save you a seat!!
And secondly, many of you shared that you got one for Christmas, and were excited, but now have NO IDEA what to do with it!! Haha! That was totally me…. I got mine for Christmas last year, and was definitely intimidated! It took me several months to bust it out, and really start using it regularly.
As I share slow cooker recipes, I am also trying to give Instant Pot modifications. I have figured out how to cook most of my slow cooker recipes in the instant pot on days I didn’t plan and start my slow cooker in time. Most of them translate pretty well! There have also been a few Instant Pot only recipes we have loved, and I’ll share those here soon!
This time of year I think we are all re-evaluating our habits….eating habits, fitness routine…decluttering our homes, schedule…you know, just trying to be our best selves in a new year!!
If you need a light, but tasty meal to add to your rotation, this is a great option!! Caprese salad is one of my very favorites! If you like it too, you definitely need to try this super easy twist that incorporates lean protein, fresh ingredients and will totally help you check off those new years resolutions!
Ingredients:
2-4 chicken breasts, thawed
1 cup Balsamic vinegar
Olive oil
Mozerella balled or cut into cubes
1/2 cup fresh basil
1 cup fresh cherry tomatoes cut in halves or quarters
Fresh spinach
Salt and pepper to taste
Directions:
Marinade chicken breast in balsamic vinegar overnight or for at least an hour before cooking. Heat Instant Pot to the saute setting, add a few tablespoons of olive oil and cook chicken on one side for about 10 minutes, or until edges are opaque. Add a few more tablespoons of oil, flip chicken and seal lid. Cook chicken for an additional 7 minutes on the poultry setting and then pressure release before opening.
While the chicken cooks, mix your mozerella, fresh basil and cherry tomatoes to make a topping for your chicken. Drizzle a little balsamic vinegar and salt and pepper to taste.
Once chicken is cooked, lay it on a bed of fresh spinach and top with your caprese mix!
