My boys would eat tortellini for every meal if I let them, and do you blame them?
Little pasta pockets of goodness right there that cook super fast for a weeknight dinner! And I throw in some spinach for good measure! This is an easy meal we have made again and again!
Ingredients:
1 lb. of ground Italian sausage, ground beef or ground turkey
Tortellini – I usually get the Buitoni 20 oz. all natural three cheese
2 cups of mozzarella cheese, divided
1 package of frozen spinach, thawed and drained or 2 cups fresh spinach, chopped
1 jar of your favorite pasta sauce – or this time I had leftover tomato basil soup from this recipe and I used it instead!
Extra virgin olive oil
Salt and pepper
Directions:
Preheat oven to 350 degrees.
Bring a pot of water to a boil and cook tortellini until al dente (usually 6-7 minutes).
While that is cooking, put a spoonful of evoo in a skillet over medium-high heat and brown your meat. Season with salt and pepper.
Drain your pasta and meat and mix with 1 cup of cheese, spinach and pasta sauce.
Pour mixture into a casserole dish and put remaining one cup of cheese on top. Cook uncovered 15-20 minutes, or until cheese is bubbly and browning on the edges.
