Today I’m sharing a simple, semi-homemade meal using ingredients from Trader Joe’s: lobster ravioli.

I made this recipe around Valentine’s Day, and it was a perfect meal for two that felt a little fancy, but was oh so simple! Add a salad and dessert and you have a special date night meal that is sure to please….oh, and maybe some wine!
Ingredients:
Trader Joe’s Lobster Ravioli – this package is enough for two!
You can just buy sauce at the store, but we will be making our own sauce using these ingredients:
Sauce Ingredients:
1 cup chopped yellow onions
1 tablespoon butter
olive oil
3 cloves of garlic
1 can of Trader Joe’s fire roasted tomatoes
1 can of tomato sauce
1 cup whipping cream
1/2 cup cheese of your choice- I used Trader Joe’s mix of parmesan, romano and asiago
Sprinkle of fresh chopped basil (optional)
Directions:
Boil water and cook the ravioli per the package instructions (about 4-6 minutes)
Saute onions over medium heat in a large skillet with butter and olive oil.
Toward the end of the onions being done, add the garlic and saute for 1-2 minutes.
Add in fire roasted tomatoes and tomato sauce for 1-2 minutes.
Stir in whipping cream and 1/4 cup of the cheese.
Once all elements of the sauce are blended and hot, remove from the stove.
Pour sauce over the lobster ravioli and top with additional cheese.
This lobster ravioli feels fancy, but is super simple! And for my fellow Friends fans…
