Trader Joe’s Cookie Butter no bake cookies coming at you today!
I have a love/hate relationship with this stuff! If you haven’t tried Trader Joe’s cookie butter, you definitely MUST! I try to only make recipes like this one when I have a place to take these cookies…because otherwise I eat WAY too many. Amazing in the moment….all the regret come swimsuit season!

Today’s recipe is a no bake cookie recipe that is quick, easy and sure to be a crowd favorite! A fun twist on the usual peanut butter version!
Ingredients:
1 1/2 cups granulated sugar
1/2 cup milk, I used 2%
1/2 cup butter
Pinch of salt
3/4 cup cookie butter
2 tsp vanilla extract
3 cups quick cooking oats
Wax paper and a baking sheet
Directions:
In a large pan combine the sugar, milk, butter and salt. Heat over medium high until it reaches a soft boil, stirring occasionally. Then let it sit 1 full minute while boiling without stirring.
Remove from the heat and stir in the cookie butter and vanilla until smooth. Fold in the oats.
Line a baking sheet with wax paper. Drop spoonfuls on the mixture onto the paper. I use a melon baller or ice cream scoop to try to keep the size consistent.
Let cool completely and enjoy!
