The list of health benefits of avocados is long…..slows aging, nourishes skin, improves nutrient absorption, lowers cholesterol, high in fiber and potassium….just to name a few! So don’t ever feel guilty about paying extra for that guac girl!

Add in the protein of an egg, season with salt and pepper and add some toppings if you want….I added bacon and cheese….and you have a delicious breakfast you can feel good about!
Ingredients:
1 large ripe avocado-make sure it is large enough that an egg could sit in each half!
2 eggs
Salt and Pepper to season
Shredded cheese (optional)
Cooked bacon bits (optional)
Directions:
Preheat oven to 425 degrees. Cut your avocado in half and remove pit. Hollow out a slightly larger hole than what is left from the pit with a spoon to give your egg a place to sit.
Carefully crack an egg into each avocado half. I set them in a muffin tin to give a solid base so the egg will not run out. Season with salt and pepper to taste and add cheese (optional).
Bake 15-18 minutes, or until eggs have set. Serve immediately.
Top with bacon, salsa, pico….whatever sounds good to you!
